CHEERS TO SPRING 2008!
By Joan Henke
It's hard to believe a quarter of the year has already passed. As we start the next quarter, we are going to be featuring WEDNESDAY SPECIALS FOR TWO that will change each month and will always include a glass of wine each, and be posted on the Home Page of this web site.
Our April Wednesday Night Special is:
BLACK ANGUS PIZZA AND
WINE FOR $19.95
In May we will feature Spring Lamb Wednesdays (specifics to be announced) and in June we will have Italian Fare Wednesdays (specifics to be announced).
TWO REPORTERS CAN'T BE WRONG
Many of you may have read the recent articles in USA Today by Jerry Shriver on February 8, and the Enquirer's WEEKEND/Life by Jim Knippenberb on March 28. Both articles show that the writers were very impressed with the wine Joe produces. We all know Joe hand crafts wonderful wine, now it has been confirmed by two wine journalists. We are ecstatic to have received such great recognition on both the local and national levels. If you didn't catch the articles, we have both of them posted at the Winery and you can read them the next time you come in for great wine and food.
CHEERS TO SCOTT GUYNUP!
Besides the recent news articles, there are other factors that have been keeping us busy. The main one being, our food is better than ever! Besides being extremely talented, Chef, Scott has been more creative and efficient in pairing our menu to Joe's wine than ANY of his predecessors. At the same time, and to your benefit, he is keeping our food costs low without diminishing the quality. Come sample his exceptional cuisine!
May we suggest you call for reservations? In the past, we have always requested reservations for parties of six or more. Now we are recommending that you make reservations for any number on Friday or Saturday Nights. We really hate to say: "We apologize that we cannot seat your party at this time", but there are times we must.
AS WE MOVE FROM INSIDE TO OUTSIDE
Now that the warmer weather has arrived, all of us are going outdoors for our gatherings. A wonderful way to complement your picnics and alfresco dinners is with a great bottle of Henke Wine.
Our business hours are:
Monday through Thursday 5:00 - 9:00
Friday 3:00 to 11:00 and
Saturday 11:00 - 11:00
The kitchen always closes a half hour before the Winery.
If you need wine or gift items, you can call to see if we are available and we will be glad to unlock the doors, just for you, and have your wine or gifts ready when you arrive.

BREAK AWAY FROM THE CHAINS
Traditionally, in a slowing or a stagnant economy, the small businesses are the ones who get hurt or disappear altogether.
We encourage all of our readers to patronize privately owned businesses so we can all keep hold of the American Dream and continue business as usual.
Thank you to all who have helped us stay afloat in adverse times.

VIEW FROM THE CELLAR
(CELLAR SIPS FROM JOE)
On Saturday, April 19, we will be hosting Henke Winery's 10th annual Amateur Wine Competition. Go to your cellar and bring out your best for a chance to win a beautiful ribbon. Best of show winner will also receive a $25 gift certificate to the Winery. Good Luck to All.
The bottling crew has been very busy and, thanks to them, we have all of our wines back in stock. The only missing wine is the Reserve Cabernet Sauvignon. I have only produced two Reserve wines in the past eleven years and it has sold out. I will keep you up to date when I produce a wine that meets the standards by which it can be classified as "Reserve".
The 2006 Henke Norton has been released. I think it is even better than the last one which was selected as the Best Red Wine in the State of Ohio by the Director of Agriculture. Stop in to try the new vintage and decide for yourself.
WESTWOOD HOME TOUR
Sunday, April 27, 2008
Besides Mother's Day, this will be the only Sunday that Henke Winery will be open. Come tour beautiful Westwood home and buildings. The Tour starts at 1:00 and runs until 6:00. The Winery will be open from 1:00 until 8:00 with the last seating at 7:30. We will be offering tours of our cellar until 5:00 p.m. that day.
A stop at the Winery, while touring the selected buildings, is a great way to relax and celebrate the day and our neighborhood.
Discounted ticket vouchers ($10 cash or check only) are available at the Winery until April 26. Full price tickets ($12) will be available at Mercy High School on the day of the tour.
One of the buildings on this self guided tour will be the 100 year old Fire House which is next door to us. If you plan to dine at the Winery that day, you may want to coordinate the Fire House tour with the time of day you plan to eat. If you show your Home Tour ticket to your server on that day, you will receive a 10% discount toward food orders.
If you want to be assured a seating during the tour, please make a reservation. There will be 500 or more people on the tour, our seating capacity is 115. Remember, all minors must be accompanied by adults.

COOKING CORNER
By Chef, Scott Guynup
CHEERS TO WARMER WEATHER!!!.
Since I have been the Executive Chef at Henke Winery for nine months now, I feel like I have been part of giving birth to an exciting era here. Besides the fact that they are so passionate about wine making, one of the aspects I like about working with Joe and Joan is their willingness to make changes.
I am looking forward to bringing new items to the menu, and as features, to always keep things "fresh" both literally and figuratively.
One of the new menu items we introduced in our most recent menu was our Crab Cake appetizer. I'm not going to give you that recipe, but I do have a simplified version for you to make for a quick treat or appetizer for the warmer month ahead.
1 Large Egg, lightly beaten
2 TBSP Chopped Green Onions
2 TBSP Chopped Fresh Parsley
1 & 1/2 TBSP Half & Half
1 tsp Lemon Juice
1/2 tsp Crushed Red Peppers
1/2 tsp Dry Mustard
1/4 tsp Ground Black Pepper
1/4 tsp Worcestershire Sauce
1 lb Fresh Lump Crabmeat, drained
2 TBSP plus (1/2 Cup set aside) Buttery Cracker Crumbs
2 TBSP Butter, melted
Combine first 9 ingredients, stir in Crabmeat and 2 TBSP of Cracker Crumbs. Chill for 30 minutes. Pre heat oven to 475 degrees.
Shape crab mixture into 8 patties and dredge them in the remaining 1/2 Cup Cracker Crumbs. Place patties on a baking sheet coated with cooking spray and drizzle with the melted butter. Bake for 10 minutes or until lightly browned. Serve with Tartar Sauce. Yield - 4 Servings.

As always, the Winery will be open for Mother's Day from 1:00 until 8:00 P.M. The last seating will be at 7:30. Your Mom will get free dessert with dinner.
Reservations are suggested for all parties and will be required for parties of five or more people. Remember we consider infants and toddlers as people.
FATHER'S DAY CELEBRATIONS
We will not be open on Father's Day, but we will be offering him free dessert with dinner on Friday June 13 and Saturday June 14.
Reservations recommended

If you can't make it to the Winery to celebrate Mother's or Father's Day, a great gift idea is a gift certificate or a bottle of Henke Wine with a personalized label. We also have gifts for wine lovers in our gift shop.
COMING APRIL 19, 2008
10TH ANNUAL AMATEUR WINEMAKER'S COMPETITION
AND 7TH ANNUAL CORK SCULPTING COMPETITIONS
It's that time of year!! All home winemakers are invited to enter wine in the 10th Annual Henke Wine Home Vintners competition. The wine competition rules are extensive and there is not enough room in the web site for them. If you want to join in, please stop by to pick up the information or contact Joe so he can send it to you. There are eight categories that are separated into dry and sweet wines. We will start accepting entries for both competitions on Wednesday, April 16 and all entries must be at the Winery by noon on April 19.
The Cork competition is a lot more lighthearted and basically just for fun. There are only two rules: 1) the sculptures must be viewable by the public and 2) made entirely of Henke Wine corks. If you don't drink enough of our wine to collect the number of corks you need, you can stop by the Winery to pick up as many corks as you need to create your sculpture.
Both competition have awards and the BEST OF SHOW WINNERS will be awarded $25 gift certificates.
FROM GRAPES TO WINE
By Joe Henke
Champagne or Sparkling wine? What is the difference? Even though we produce it as a true Champagne, we label ours a Henke Sparkling Chardonnay. This is with respect to the French Epernay and Reims districts, which is where Dom Perignon developed the Chammpenois process. "Bubbly" produced in those two districts are the only wines that are supposed to be classified as Champagne, but be assured that, at no time do we diminish the quality and procedures that Dom used.
Sparkle yourself and come in to try 2006 Sparkling Chardonnay which will be released later this Spring. Please watch our website home page for the release date.
So far, Mother Nature has been kind. We have not seen the wild temperature fluctuations that we had last year. Pruning has been started and, hopefully, we can avoid the disasters that came with last year's vintages. I hope I'm not being premature when I say "THANK YOU MOTHER NATURE" .
